A simple method for fluffy, flavorful Mexican rice infused with rich tomato flavor, perfect as a side for various dishes.
Ingredients

- 1 cup long-grain white rice
- 2 tablespoons neutral oil
- 1 finely chopped onion
- 2 cloves minced garlic
- 1 cup tomato sauce or pureed tomatoes
- 2 cups chicken or vegetable broth
- 1 teaspoon salt
- 1 teaspoon ground cumin
- Optional: pinch of chili powder
- Optional: chopped cilantro for garnish
Instructions
- Rinse the rice until the water runs mostly clear to remove excess starch.
- Toast the rice in oil over medium heat for 4 to 5 minutes until golden and nutty.
- Add onion and garlic, stirring for 1 minute to soften.
- Stir in tomato sauce, broth, salt, and cumin (and chili powder, if using).
- Bring to a simmer, cover, and reduce heat low. Cook for 15 to 18 minutes without lifting the lid.
- Turn off the heat and let it rest, covered, for 10 minutes.
- Fluff gently with a fork, and fold in cilantro if desired before serving.
Notes
For perfect texture, do not stir while cooking, and let the rice rest after cooking.
