Description

A delightful mix of tender chicken, colorful vegetables, and fluffy rice, perfect for a quick dinner or meal prep.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add the mixed vegetables and sauté until tender.
  3. Push the vegetables to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  4. Add the cooked rice and diced chicken to the skillet.
  5. Pour the soy sauce over the rice and stir to combine all ingredients.
  6. Stir in the green onions and season with salt and pepper.
  7. Cook for an additional 2-3 minutes until heated through and well mixed.
  8. Serve hot.

Notes

For the best results, use day-old rice and add a splash of rice vinegar or garlic powder for extra flavor. Garnish with extra green onions and serve with soy sauce on the side.
