Description

A delightful mix of savory ground beef, sweet roasted sweet potatoes, creamy cottage cheese, and a drizzle of spicy hot honey, perfect for any night of the week.


Ingredients

  • 1 lb lean ground beef (93%)
  • 2 medium sweet potatoes, peeled and diced
  • 1 sliced avocado
  • 1 cup cottage cheese
  • 1 diced yellow onion
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp)
  • 2 tbsp hot honey
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon
  • Salt and pepper, to taste
  • Optional: chopped cilantro, red pepper flakes, lime juice

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté diced onion until soft, about 3–4 minutes.
  3. Add ground beef to the skillet. Cook for 6–8 minutes, breaking apart. Stir in taco seasoning, salt, and pepper. Cook until browned.
  4. Assemble bowls: sweet potatoes on the bottom, then ground beef, avocado slices, and a scoop of cottage cheese.
  5. Drizzle hot honey generously over each bowl. Add optional garnishes if desired.
  6. Serve immediately and enjoy while warm.

Notes

For crispy sweet potatoes, space them out on the baking sheet to avoid steaming.
